Celiac Disease is the inability to digest the gluten in wheat, rye, triticale, barley or oats. It is not the same as the gluten in corn or rice. A strict, gluten-free diet is the only way to control this condition. Without the special diet, sufferers can develop anemia, bone problems, or even nerve damage.
